No full recipe this time but just me sharing food again.

Yesterday my nephew wanted a Kapsalon (thats how we call it in the netherlands). So I made one myself normally its fries but I used fried potato slices. And instead of döner meat I used shoarma made from chicken thighs. Topped with melted gouda cheese sprinkeled with lettuce. Forgot to get tomatos and cucumber topped with garlic sauce and chili sauce.

I managed to eat a bit and he ate a whole lot so i think it was a succes.

Today its time to adress the big elephant in the room, and explain my absence from content. For a bigger explain check the video. For a quick update.

Health got a few big hits over the last years. As a lot of you guys know already.

But it took a big swing at me about a year ago. Starting with surgery's in my body. 2 in my upper body and 1 in my throat, the last of these was a big #cancer scare with possible lymphoma. Luckely this was not yet the case. And surgery made it an even smaller possibility.

The second surgery was stomach which makes eating a lot harder and that also makes the recipe making difficult. But not to worry, I plan on becoming more active over the coming time and get back on the horse with recipes, reviews and just overall content.

So i hope you guys are all still happy healthy and ready to open this new chapter together.

🇳🇱Vandaag heerlijke bami, soms hoeft het niet moeilijk te zijn om heerlijk te eten.

In dit geval een goed gevulde bami met kippendij, kalkoen filet blokjes, rode paprika, mais, ui, boontjes, champignon en een sesam soja sausje erdoorheen.

🇬🇧Today some lovely egg noodles, sometimes it doesn't need to be difficult to make a great meal.

Like this meal, egg noodles with chicken thighs, turkey cubes, red bellwether, sweetcorn, onion, green beans, mushrooms and a sesame/soy sauce.

Lekker makkelijk maar blijft toch ook wel lekker.

Lekker makkelijk maar blijft toch ook wel lekker. Broodjes shoarmavlees met kaas, rucola, sambal en knoflooksaus. Verder niets bijzonders.

Maar voor nog geen 2 euro per broodje is er ook niet veel te klagen denk ik.

The road to my first smoked salmon.

Started off with a nice halved salmon.
Thrown in a salt bath for 24 hours.

Then smoked on a cherry, oak woodchips from @rookhoutonline (-mix 20/80-) for 8 hours.

And ofcourse finished of with a nice sandwich. Starting with a kaiser roll, then a smoked cream cheese spread, fresh arugula, the smoked salmon and finished off with a bit of lemon juice.

Zalm zijde met huid +/- 1kg
Grof zeezout 300 gram
Rietsuiker 150 gram
Peperkorrels gekneusd 2 theelepels
Jeneverbessen gekneusd 1 theelepel

Pasta and beef is just a great combo. Made a tomato beef sauce with onions, bell peppers, fresh tomatoes and beef strips slow-cooked until I liked the thickness. Then cooked my pasta and mixed it all to create this taste powerhouse.

Soms gaat er niks boven een stapel zelf gebakken pannenkoeken. Naturel, kaas, spek, ham kaas en ham kaas en extra ei varianten.

Alles wat je nodig hebt is meel, melk en ei. Plus dat wat je erin doet natuurlijk.

Meng 500 gram mail met 800ml melk en 2 eieren en je beslag is klaar.

Sometimes there is nothing better than having a great thick medium rare ribeye.

Using a great 2.5 inch 6 cm thick 12 days aged ribeye. Dry brined and seasoned with my own all purpose rub. And topped off with some garlic. Seared in a very hot pan all around and slow cooked up to internal temperature of 57°C. In the end I ate it with some mashed potatoes and veggies but forgot to make a photo of that😅 but I swear I ate veggies.

Beetje laat met het resultaat van de warm gerookte kipfilet, maar beter laat als nooit toch?

Heerlijk stokbroodjes van gemaakt. In totaal was het 1 kilo kipfilet gerookt op heerlijke appel chunks van @rookhoutonline gerookt voor ongeveer 2 uur op 100 graden en daarna opgestookt en afgegaard.

Verse Rucola sla en plakken jonge Gouda kaas. En de kip even snel opgewarmd in de pan aangezien ik dit de dag erna klaargemaakt heb. Afgemaakt met een lekker chili knoflook sausje. En heerlijk genieten.

Soms gaat er niks boven een huis gemaakte tomaten kippensoep. In andere woorden ik had te veel tomaten puree en tomatenblokjes over die op moesten en wat beter als er een soepje van te maken

3 blikken tomaten blokjes 2x tomaten puree 500 gram kipfilet een pan wat water en kruiden en your good to go. Wat ik lekker vind persoonlijk is wat kaas toe te voegen in de kom in dit geval jonge tuinkruiden.

Had my brother over for dinner so what better then to make some lovely #smoked double #cheeseburgers from the grill. Ofcourse smoked with lovely red wine barrel chunks from @rookhoutonline

Beef was 100% ground beef but i feel this was a lean beef since it was not as fatty or juicy as normally.

Seared the burgers on direct heat before adding wood to the charcoal and finishing them on indirect heat.

Buns in the end lightly toasted and topped the burgers with good old American melt.

Stack the burgers ass lettuce and tomato and finish with your sauce of preference. I used an garlic BBQ sauce this time.

Today steak and veggies for dinner. Steak is a 1.5 inch thick ribeye seasoned with cayenne salt pepper onion and garlic. And seared on a very hot pan to get a nice crust. Cooked till 56°C internal and finished off with a nice selection of veggies containing carrots paprika leek onion and lots more. Seasoned with salt pepper garlic and a soy/mirin (rise wine) sauce.
